Nothing like the cold to fire up our collective family appetite. Thought I would share two of the new favorites recipes I’ve found lately. One is more time consuming than the other, but both are worth the trouble. Click on the links to get to the recipe.
Caprese Chicken. Yummy yum! Less than an hour to prepare. Sauteed chicken breasts, topped with a simple, quick tomato topping and a tad of fresh mozzarella. Divine! Child and non-tomato eating husband both gobbled it up. It’s really great served with a side of green beans.
Pork Carnitas. Who needs tortillas to enjoy a great Mexican meal? Not me! I eat these with a nice pile of lettuce, grape tomatoes and a good dollop of guacamole. But the rest of the family wrapped the crispy shredded pork and made soft tacos. This one is an all day affair. I simmer it in the crockpot for five hours on high instead of in the oven per the original recipe. Then the pork gets shredded and crisped up under the broiler before serving. Worth making a double batch and freezing half to give the time investment a little more payoff. Note: We usually can’t find pork butt as specified in the recipe so we just use whatever pork roast we can get. I’ve used pork shoulder and it worked great.
