We had lunch this summer at a cute little train station here in Cincinnati that has been turned into a restaurant. One of the sides available was a “Gazpacho Salad.” Always up for a new veggie combo, I gave it a try. It was pretty darn yummy. I’ve never been big on cucumber salads, but this was very cool and fresh. I just had to come home and make up my own version.
I happened to also be working on a Lemon Herb Vinaigrette recipe, so it got incorporated into the mix. You can use your own Italian bottled dressing if you like, but I think it’s better with a fresh dressing with tons of herbs.
Lemon Herb Vinaigrette
Inspired by Diane of Tasty Jewelry
2 1/2 Tablespoons fresh-squeezed lemon juice
6 Tablespoons olive oil
1 small clove of garlic, crushed
1/4 cup of lightly packed fresh herbs – my favorite combo is basil, dill (just a touch), mint, rosemary and parsley
1/8 teaspoon salt
1/8 teaspoon pepper
Throw everything into a mini food processor or blend in a tall glass with a stick blender.
Cucumber and Tomato Salad
Makes about 3 small side servings
I medium cucumber, peeled, sliced in half and seeds scooped out. Then slice again lengthwise into quarters and then across into nice chunks.
1 Tablespoon minced green pepper
2 Tablespoons chopped red onion (Cut them as fine as you like. I don’t like huge bites of onion. Can be any kind, even green onion would be good.)
1 cup cubed firm and ripe tomato. Cut tomato in half and scoop out the watery seedy part leaving the solid flesh. This keeps the salad from being too runny.
1 1/2 teaspoon red wine vinegar (Or your favorite kind. If you are using bottled dressing and it has vinegar in it you can skip this.)
2 Tablespoon of Lemon Herb Vinaigrette (Or your favorite bottled vinaigrette.)
Combine the vegetables in a medium-size bowl and gently toss.
Whisk together the dressing with the vinegar. Toss salad with dressing. Allow it to sit for maybe half an hour so the flavors blend.
Sound good? If you are still overrun with cucumbers and tomatoes. I did try another similar recipe I found online and it was tasty too. It has avocado! I’ve included a link. It’s quicker to make and has less ingredients.
