Chicken Pot Pie

Did you grow up eating chicken pot pie? You know, the kind that came frozen in an individual pie tin? And it took hours to bake and then when you poked it with a fork it spewed forth like molten lava? Memories…

Over the years I have made numerous attempts to find a homemade version. They have all turned out to be pretty blah. Until now.

I saw this recipe on “Cooking for Real” with Sunny Anderson on the Food Network and felt that she included enough seasoning that it might have some flavor. It turned out very well! Quite yummy!

The second best thing about it is that it doesn’t dirty every pot and pan in the kitchen to make it. That’s important to me! (I’m looking at you, Rachel Ray. Your recipes are delicious, but you obvioulsy have people to clean up after you!)

This version is prepared all in one iron skillet. Love that!

My only suggestion is that you make the filling early in the day or the day before and then warm it back up on the stove before finishing in the oven with the crust. The flavors need to mingle first. That’s what I did and we loved it.

So give it a try, if you are nostalgic for the pot pie of the 1970’s. Mmmmmm.

[Note: I also used 1/2 and 1/2 instead of heavy cream. Worked fine for less calories.]
