Earl Grey Shortbread Cookies

Found another great summer dessert. Cause we don’t want to have a shortage of summer dessert ideas. That would be bad.

I got this recipe from “Five Ingredient Fix” on the Food Network. I’ve made a few of Claire Robinson’s recipes from that show and have liked them all very much. She only uses five ingredient for each thing she makes. This could make for bland food, but in her case it does not. She uses very flavorful ingredients which result in relatively easy and simple food that is really delicious.

These were quite quick to make, and even though the dough needed to be chilled for 30 minutes it wasn’t too much of a time commitment. I ended up cutting open four tea bags – I used Republic of Tea’s Earl Greyer Red Tea – which was just a little over one tablespoon. I felt that was enough, but if your tea is milder you might want to use the full two tablespoons the recipe calls for.

We served this with a scoop of raspberry sorbet. So refreshing!

    Yum! Shortbread and Earl Grey are two of my favorite things.

      Me too! I am eating them slowly… due to the two sticks of butter needed to make 2 dozen cookies. 😦
