After a nice weekend with many, many naps, I think I have finally kicked the end of school fatigue. We were all pretty worn out.

Sunday we got an uncharacteristic burst of energy and made a special dessert. Neil worked all day making a Pineapple Granita. You can find the recipe here on the Epicurious website. FYI, they have a snappy app for the iPad and the iPhone. Really nice. We’re trying some turkey burgers later this week we found on there.

The granita doesn’t have many ingredients, just pineapple juice and simple syrup. But it does require attention every 30 minutes or so as it freezes to break it into granules with a fork. Well worth it! And no dairy, which makes me ever so grateful.

Mari provided the recipe for the cookies we had along side. One of her latest favorite websites is The Princess Portal. It’s a lovely site that has inspired her to take photos and do some writing. She saw this recipe for Lemon Sable Stars and wanted to try them. I thought a lemony shortbread would be great with the cold granita.

They were delicious! I will warn you, two sticks of butter for about 18 cookies. Yikes! Not something we’ll be making often. Darn you shortbread and your buttery goodness!

These take some planning ahead as well – the soft dough has to be chilled a minimum of one hour. Two would have been better.

    Those butterflies cookies looks so adorable. I have to find the cutter shape like that. Our favourite homemade dessert is mango & sweet coconut rice. Thanks for sharing.
