Had a really yummy lunch the other day.
I like to make something vegetarian for myself and then eat it for lunches for the week. Since I am the only one who does greens around here, I enjoyed the whole batch of Kale with Cranberries. I did add some salt to the recipe. And used almonds instead of pine nuts, cause that’s what I had on hand. Quite good. Be sure to steam the kale for quite a while. I did 20 minutes in my electric steamer. Probably could have gone 25. Kale is sturdy.
I also made some delicious Wild Rice. the linked recipe is for cabbage wraps. I just eat the filling, though I have wrapped it in lettuce when I have some available. I love the apple pieces in it. I couldn’t find plain wild rice, so I just made a box mix – Uncle Ben’s claims to be all-natural and why shouldn’t I believe them? (I did use the seasoning packet that was included, in case you wondered.)
